If the search function worked better, I would dredge up the threads from past years on why it is done this way, but I grow old and less patient, so I will just summarize:
The first day or two of school are mostly housekeeping and getting organized. By putting them before the holiday and then taking the break, the real learning starts with almost a full week. The timing of the Jewish Holidays cannot be helped. The schools close because too many students and staff would be out for regular learning to take place. The rest of the year is pretty much as it has been for the last few years.
No the district does not care that you want to ski in Utah in February. No, the district does not take Easter and Passover into account, because they need to work around the testing schedule in the Spring, which is state mandated and from which they cannot opt out.

From past observations, please let the school know that your child may be missing school those preLabor Day days. This way the teacher knows to save all the opening days stuff for the child, and that the child will show up, and not be a "no show".
